Meat measurements

 

Loin muscle area is outlined.  Fat depth is measured ¾ the distance across the loin muscle.  Measurement is taken from the outer edge of the loin muscle to the outer edge of and perpendicular to the skin surface.  (Example = 38 mm – normal expected 12 mm).

 

Many probes simultaneously measure fat and loin muscle depths.  Measurements made at P2  measurement 6.5 cm from the midline
